You can use any greens you have on hand for this. I used sunflower seed greens.
For the dressing:
1 TBS coconut oil, melted
1 TBS lemon juice
salt & pepper to taste
Simply mix together, and pour over salad greens. Make sure your salad greens are room temperature; if they are cold, it will cause the coconut oil to solidify. For sturdy greens (like the sunflower seed greens) this really isn't a problem, but for tender leaf greens, it may cause your salad to wilt. Alternatively you could use olive oil, or some other oil of choice.
